Websites being hacked & duplicated, what should we do?

Hi, please help!
Our website was hacked and being totally duplicated. They even injected codes to intercept our orders. Although the codes issue had been solved, still there're two mirror sites out there.
When search for some of our key words, they even have good ranks. What exactly can we do to let Google ban those two sites.

For few weeks ago my website is constantly decreasing in search position. I lost keywords and is gooooing down.

Although it is well rated on several on page and off page seo verification software that I have tried.
I checked Google search console and Analytics and found no major problems. However… from one day to another it keeps going down.
I also checked what the main competitors are doing and they are not doing well, at all.
The main competitor actually has a creepy website. Totally devoid of onpage or offpage SEO but with an enormous number of backlinks. And of a very bad quality, which should disqualify it, still…
Few weeks ago I changed something.
In the pages I had H1, 4xH2, no H3 and an H4 without content.
An unnatural H tag structure.
Now I have H1, H2, H3, 3xH4, with the coherent information.
Theoretically, Google should have been “happy” or I’m missing something. I use a SAAS platform.
I just found out that they made changes to the keywords (tags).
I am selling toner cartridges for printers.
So…
The tags are printer models and generate a url in which they have the products.
Ex. https://www.sertit.ro/cartus-imprimanta-cilindru-color-hp-laserjet-pro-m-177fw goes to the products for that printer model.
The question is… should I make tag canonical?

Removed Product page on our website, what to do
We just removed an entire product category on our website, (product pages still exist, but will be removed soon as well) Should we be setting up re-directs, or can we simply delete this category and product

How To Cleanup the Google Index After a Website Has Been HACKED
We have a client whose website was hacked, and some troll created thousands of viagra pages, which were all indexed by Google. See the screenshot for an example. The site has been cleaned up completely, but I wanted to know if anyone can weigh in on how we can cleanup the Google index. Are there extra steps we should take? Duplicate content and http and https
Within my Moz crawl report, I have a ton of duplicate content caused by identical pages due to identical pages of http and https URL's. For example: http://www.bigcompany.com/accomodations https://www.bigcompany.com/accomodations The strange thing is that 99% of these URL's are not sensitive in nature and do not require any security features. No credit card information, booking, or carts. The web developer cannot explain where these extra URL's came from or provide any further information. Advice or suggestions are welcome! Iframes & SEO
I've got a client that wants a site with all content in iFrames. They saw another site they liked & asked if we could do it. Of course we can technically. How big a negative hit would they take with SEO? Is there anything we can do to mitigate it, such as redirects, etc? Thanks for the help!
