Restaurant menu SEO: PDF or HTML?

Is it better to use a PDF or hard code restaurant menus (or any document for that matter) in HTML? I want the content to be indexed and thought PDF was the way to go for several reasons, but I wanted to get confirmation on this before I move forward.

For SEO I would recommend HTML, with the option to download a PDF. That being said you should also consider how much time is wasted on doing it HTML. Can the company earn more money by spending their time on something else? I mean how often do people actually search for a certain dish when they are about to go out for dinner. My bet is that they are more likely to do a search like: "Italian restaurant in downtown Berlin" rather then "Broccoli slightly roasted in white-wine". Do you see what I mean?

Should we remove category paths for better SEO?
We're looking to build some serious content and capitalise on long-tail keyword traffic for our sub-category pages, example for targeted keyword "designer dining tables". Example of current link: www.website.com/designer-furniture/designer-dining-tables.html Would removing the category paths help? Example result - www.website.com/designer-dining-tables More user friendly URLs and better for SEO would you suggest? Coming soon SEO
Hi, I was wondering what is the best practice to redirect all the links juice by redirecting all the pages of your website to a coming soon page. The coming soon page will point to the domain.com, not to a subfolder. Should I move the entire website to a subfolder and redirect this folder to the coming soon page? Thanks

International Seo - Canada
Our organization is currently only operating in the USA but will soon be entering the Canadian market. We did a lot of research and decided that for our needs it would be best to use a subfolder for Canada. Initially we will be targeting the english speaking community but eventually we will want to expand to the french speaking Canadians as well. Does Bitly hurt your SEO?
I often use bit.ly or Google URL shortener in links when other websites post my articles so I can track clicks. However, I am thinking this may HURT my SEO given that it is taking away a back link to my website. Is that logic correct ? If so, what is a good way to be able to track clicks if a website posts your article without jeopardizing the SEO value?

How to tell if PDF content is being indexed?
I've searched extensively for this, but could not find a definitive answer. We recently updated our website and it contains links to about 30 PDF data sheets. I want to determine if the text from these PDFs is being archived by search engines. When I do this search http://bit.ly/rRYJPe (google - site:www.gamma-sci.com and filetype:pdf) I can see that the PDF urls are getting indexed, but does that mean that their content is getting indexed? I have read in other posts/places that if you can copy text from a PDF and paste it that means Google can index the content. When I try this with PDFs from our site I cannot copy text, but I was told that these PDFs were all created from Word docs, so they should be indexable, correct? Since WordPress has you upload PDFs like they are an image could this be causing the problem? Would it make sense to take the time and extract all of the PDF content to html? Thanks for any assistance, this has been driving me crazy.
